01 - Line a baking tray with parchment paper and set aside.
02 - Place half of the cookies (12), flat side up, on the prepared baking tray.
03 - Using a small ice cream scoop or tablespoon, place one scoop of softened vanilla ice cream onto each cookie base.
04 - Top each ice cream scoop with a second cookie, pressing gently to form a sandwich without cracking the cookies.
05 - Immediately roll the sides of each sandwich in the sprinkles to coat the exposed ice cream completely.
06 - Return the completed sandwiches to the baking tray and freeze for at least 1 hour or until firm.
07 - Serve directly from the freezer and enjoy immediately.
