# What You Need:

→ Protein

01 - 1 pound ground turkey

→ Vegetables

02 - 4 cups broccoli florets
03 - 1 red bell pepper, sliced
04 - 1 medium carrot, thinly sliced
05 - 3 green onions, sliced
06 - 2 cloves garlic, minced
07 - 1-inch piece fresh ginger, grated

→ Sauce

08 - 1/4 cup low-sodium soy sauce
09 - 2 tablespoons oyster sauce
10 - 1 tablespoon toasted sesame oil
11 - 1 tablespoon honey or maple syrup
12 - 1 tablespoon rice vinegar
13 - 1 tablespoon cornstarch mixed with 2 tablespoons water

→ Garnish

14 - 1 tablespoon toasted sesame seeds
15 - Fresh cilantro or additional sliced green onions

# How to Make It:

01 - Whisk together soy sauce, oyster sauce, sesame oil, honey, rice vinegar, and cornstarch slurry in a small bowl. Set aside until ready to use.
02 - Heat a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking apart with a spoon, until browned and cooked through, approximately 5 to 6 minutes. Transfer to a plate and set aside.
03 - Add a splash of oil to the same skillet if needed. Sauté garlic, ginger, and white parts of green onions for 1 minute until fragrant.
04 - Add broccoli, bell pepper, and carrot to the skillet. Stir fry for 3 to 4 minutes until vegetables are just tender but still crisp.
05 - Return the browned turkey to the skillet. Pour in the prepared sauce and toss everything together. Stir fry for 2 to 3 minutes until vegetables are evenly coated and sauce has thickened.
06 - Remove from heat. Garnish with sesame seeds and chopped green onions or cilantro if desired. Serve immediately, with rice or noodles if preferred.

# Expert Advice:

01 -
  • The ground turkey creates these perfect little crumbles that soak up sauce way better than sliced meat
  • Everything happens in one pan, so you get maximum flavor with minimum cleanup
  • The sauce comes together with pantry staples you probably already have
02 -
  • Don't overcrowd your pan or the vegetables will steam instead of stir fry
  • Have all your ingredients prepped before you turn on the heat, everything moves fast once you start cooking
  • The sauce will look thin at first, give it a minute to bubble and thicken before you panic
03 -
  • Toast your sesame seeds in a dry pan over medium heat until golden, they taste way better
  • Let the pan get properly hot between steps, that's how you get those crispy edges on the turkey
