- Preheat the oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well blended.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, approximately 2-3 minutes.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
- Gently fold in the chocolate chips and chopped mini candy eggs until evenly distributed throughout the dough.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
- Gently press a few whole mini eggs onto the top of each cookie dough ball for decoration.
- Bake for 10-12 minutes, until the edges are set but the centers remain soft.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.
