# How to Make It:

01 - Bring a large pot of salted water to a boil. Cook fettuccine or tagliatelle according to package instructions until al dente. Reserve 1/2 cup of pasta water, drain and set aside.
02 - Heat unsalted butter and olive oil in a large skillet over medium heat. Add chopped shallot and minced garlic. Sauté for 1 to 2 minutes until aromatic.
03 - Add sliced mixed mushrooms and a pinch of salt to the skillet. Sauté for 6 to 8 minutes until mushrooms are softened and golden.
04 - Pour in vegetable broth and simmer for 2 minutes. Allow the liquid to reduce slightly.
05 - Lower the heat. Stir in heavy cream and grated Parmesan cheese. Cook for 2 to 3 minutes, stirring, until the sauce thickens.

07 - Add drained pasta to the skillet. Toss to combine, using reserved pasta water as needed to loosen the sauce.
