01 - Combine vanilla ice cream, milk, peppermint extract, vanilla extract, and green food coloring in a blender. Blend until completely smooth and creamy. Add additional milk 1 tablespoon at a time if thinner consistency is preferred.
02 - Taste the mixture and adjust peppermint extract by 1/8 teaspoon increments if stronger mint flavor is desired. Add food coloring drop by drop until vivid green color is achieved.
03 - Divide evenly between two tall glasses. Top with whipped cream, maraschino cherry, and green sprinkles if using. Serve immediately while cold.
